Claclo

Claclo — street food from Abidjan, Ivory Coast

Unlike fried plantain slices, claclo is mashed into a flat galette before it ever touches the pan, so it fries up more like a dense pancake than a chip.

Ripe plantain is pounded to a paste, flattened by hand into small discs, and pan-fried until the edges crisp and caramelize. Vendors sell it hot off the griddle in Abidjan's morning markets, sometimes dusted with a little sugar or ground chili.

Why it's made this way: It's one of several distinct ways Abidjan street cooks turn ripe plantain into a meal, each with its own name, texture and moment of the day — claclo belongs to breakfast, not the evening maquis crowd.
