Ébrié families traditionally reserve N'Tro for Sunday meals, treating it less like an everyday recipe and more like a small weekly ritual.

Fresh and sun-dried okra are blended with kplala leaves and small bitter eggplants into a dark, glossy, deeply savory sauce, simmered with fish or meat. It's spooned generously over foutou banane rather than rice.

Why it's made this way: The recipe is specifically credited to the Ébrié people, Abidjan's original lagoon inhabitants, and its Sunday-only status reflects how food marks the rhythm of the week in lagoon households.
