Its other names, duckanoo and tie-a-leaf, point to its roots: duckanoo comes from the Twi word dokono, the name for Ghana's leaf-wrapped kenkey.

A sweetened cornmeal or sweet potato pudding mixed with coconut, sugar, and spices, wrapped tightly in banana leaf and boiled, then sold untied at roadside stands as a portable sweet snack.

Why it's made this way: The pudding comes from the West African tradition of wrapping and boiling cornmeal in leaves, carried to Jamaica by enslaved Africans, and it's made across the island, including Portland's banana-growing east.
