The dish descends from Spanish escabeche, but Old Harbour Bay's fisherwomen turned it into a full roadside industry, frying fish fresh off incoming boats within the same hour it's caught.

Whole fried fish is topped with a vinegar-based pickle of carrots, onion, and Scotch bonnet, sold hot from a strip of roadside stalls at Old Harbour Bay right by the fishing beach.

Why it's made this way: Old Harbour Bay in Saint Catherine is one of Jamaica's most famous fish-frying roadside strips, drawing customers specifically for its fresh-off-the-boat escoveitch tradition.
