The dish descends from Spanish escabeche, but Old Harbour Bay's fisherwomen turned it into a full roadside industry, frying fish fresh off incoming boats within the same hour it's caught.
Whole fried fish is topped with a vinegar-based pickle of carrots, onion, and Scotch bonnet, sold hot from a strip of roadside stalls at Old Harbour Bay right by the fishing beach.
