Most of Jamaica's conch comes from the Pedro Bank, a large offshore shelf south of the island, where the queen conch fishery runs under a strict annual quota.

Conch meat is tenderized and simmered for hours in a spiced broth with yam, dumpling, and pumpkin, sold by the cup from beachfront stalls in Treasure Beach and Black River.

Why it's made this way: Saint Elizabeth's south coast, home to fishing villages such as Treasure Beach, faces the waters where much of Jamaica's conch is fished, and conch soup is a staple of its cookshops and beach stalls.
