Middle Quarters Pepper Shrimp

🦐
Photo coming soon

Vendors at Middle Quarters have sold pepper shrimp from the same roadside spot on the road to Black River for so long that the tiny community is now known on maps mainly because of the dish.

Small river shrimp are boiled whole in heavily peppered, salted water until fire-red, then sold by the bag from women lined along the roadside at Middle Quarters, eaten shell-on straight from the bag.

Why it's made this way: The dish is inseparable from this exact stretch of road in Saint Elizabeth, where generations of women vendors have sold it to passing traffic, making it one of Jamaica's most location-specific street foods.
