Vendors at Middle Quarters have sold pepper shrimp from the same roadside spot on the road to Black River for so long that the tiny community is now known on maps mainly because of the dish.
Small river shrimp are boiled whole in heavily peppered, salted water until fire-red, then sold by the bag from women lined along the roadside at Middle Quarters, eaten shell-on straight from the bag.
