Saint Elizabeth is nicknamed "the breadbasket of Jamaica," and its breadfruit trees are so productive that roadside vendors roast the fruit whole over open coal fires rather than slicing it first.
Whole breadfruit is roasted directly over coals until the skin chars and the inside turns soft, then peeled, sliced, and served with sautéed saltfish from roadside coal-pot vendors.
