The dish gets its name from "running down" coconut milk by simmering it until the oil separates and the solids form curdled flecks, a slow process cooks watch for by sight rather than by timer.

Salted mackerel is simmered in coconut milk that's been reduced until it curdles into thick curds, seasoned with onion, tomato, and Scotch bonnet, served with green banana or dumpling from small coastal kitchens near Falmouth.
