Negril's beach vendors sell curry lobster in step with Jamaica's lobster closed season, meaning the dish essentially disappears from local stalls for several months each year to let the population recover.

Fresh lobster tail and claw meat are simmered in a Jamaican curry sauce with Scotch bonnet, thyme, and coconut milk, served with rice or bread from beachfront stalls around Negril.

Why it's made this way: Westmoreland's Negril coastline is one of Jamaica's best-known lobster-fishing grounds, making curried lobster a defining local seafood specialty rather than a general island dish.
