Gohei Mochi

It is said to have begun with lumberjacks in the Kiso area who pressed rice onto scraps of timber and grilled it over a bonfire with miso.

Pounded non-glutinous rice is moulded onto a flat wooden skewer, brushed with a sweet, nutty miso or soy sauce and grilled, sold at roadside stalls and old post towns in the mountains of Nagano and Gifu.

Why it's made this way: It belongs to the Kiso and Ina valleys of Nagano, the Tono area of Gifu and Mikawa in Aichi, and is thought to date from the mid-Edo period.
