Hiroshima Prefecture farms around 60 percent of Japan's oysters, mostly on bamboo rafts in the Seto Inland Sea.
Oysters in the shell are set on a hot grill at the entrance of open-fronted shops along Miyajima's Omotesando shopping street, cooked until they open in their own juices and eaten on the spot.
Why it's made this way: Miyajima sits in Hiroshima Bay, the heart of Japan's oyster farming, and grilled oysters are the classic snack on the walk to Itsukushima Shrine.
