Roshoki, a shop in Kobe's Nankinmachi founded in 1915, calls itself the birthplace of the butaman, Japan's pork bun.

Small steamed buns stuffed with seasoned minced pork are sold hot from steamers at takeaway counters in Nankinmachi, Kobe's Chinatown, and eaten on the street.

Why it's made this way: Roshoki's Chinese founder adapted Tianjin-style baozi to Japanese tastes in Kobe, and pork buns have been Nankinmachi's signature street snack ever since.
