Negiyaki is traditionally eaten with soy sauce and a squeeze of lemon rather than okonomiyaki sauce, so the green onion's sweetness isn't buried under the thick brown sauce used on most Osaka griddle food.

A thin batter loaded with a heap of sliced green onion instead of cabbage is grilled on a teppan into a lacy, light pancake, then finished with soy sauce or a dashi-soy dip rather than the thick brown sauce used on okonomiyaki.

Why it's made this way: The dish is credited to Yamamoto, an okonomiyaki shop in Osaka's Juso district, where in the 1960s the owner made a green-onion version for her children; customers asked for it, and it became the shop's signature.
