Two or three whole small octopuses are flattened into each cracker by a hot press, so their outlines show clearly in the finished senbei.

Octopus is laid on thin cracker batter and squashed flat in a heavy heated iron press, then handed over crisp and hot to eat while walking the shopping street up to Enoshima Shrine.

Why it's made this way: Pressed octopus senbei are the snack most associated with Enoshima in Fujisawa, Kanagawa, where they are made to order on the island's shrine approach.
