There is no single recipe: each of the roughly 20 shops the city certifies as serving authentic Sasebo burgers makes its own version with its own sauce and toppings.
Big, made-to-order hamburgers sold from burger stands and small shops across Sasebo, usually wrapped in paper for eating on the go.
Why it's made this way: Hamburgers reached Sasebo in Nagasaki Prefecture around 1950 through the US Navy base there; locals learned the recipe from Navy personnel, sold burgers to Americans at first and adapted them to Japanese tastes.
