The thin pancake is rolled around disposable chopsticks, so it comes with its own handle.
Flour batter is spread thin on a griddle, topped with fish sausage, nori and aonori, rolled onto chopsticks and brushed with sauce; sold at street stalls, shop counters and festivals in Yamagata.
Why it's made this way: In 1938 a vendor who had learned the trade in Tokyo brought dondon-yaki to Yamagata and sold it while beating a drum, which is where the name comes from; rolling it onto sticks so it was easier to hold came later, and it is still sold at Yamagata shops and festivals.
