At Yamadera temple it is sold as chikara konnyaku, power konnyaku, to eat before climbing the 1,015 steps to the main hall.
Balls of konnyaku about 3 cm across are simmered in soy-based broth, skewered like dango and eaten hot with karashi mustard, sold at stalls around Yamadera, tourist spots and events across Yamagata.
Why it's made this way: It is a Yamagata Prefecture soul food tied to Yamadera, whose founder Ennin is said to have brought konnyaku back from China.
