For all its humility — just lentils, rice, and fried onion — mujaddara sits on the same Karaki tables as mansaf, proof the city's food identity rests as much on frugal farmhouse cooking as on its famous feast dish.

Brown lentils are simmered with rice and piled high with deeply caramelized onions, sometimes finished with a drizzle of olive oil or a side of plain yogurt. It's a fixture of Karak's home kitchens and market-stall lunch counters alongside taboon bread.

Why it's made this way: The dish reflects Karak's highland farming economy, where lentils and grain have long been cheap, storable staples turned into a filling daily meal.
