Ingokho (Luhya-Style Stewed Chicken)

The word ingokho simply means 'chicken' in Luhya languages, but the dish is reserved for special guests — a Luhya homestead is considered incomplete without one being raised for exactly this purpose.

A whole free-range chicken is browned and then slow-braised with onions, tomatoes, and spices until deeply tender, traditionally served whole or in large pieces at the center of the table. Market eateries in Kakamega serve it with ugali and greens.

Why it's made this way: Among the Luhya, chicken-keeping and ingokho are tied to hospitality — the dish is customarily prepared for weddings, important visitors, and other honored occasions rather than everyday fare.
