Aliya began as a preservation technique born of necessity, drying meat over slow fires long before refrigeration reached rural Nyanza, and it's still made almost exactly the same way.
Strips of beef or goat are salted, smoked, and slow-dried over a low fire until dark and chewy, concentrating the flavor. It's sold in Kisumu's markets by the piece and often fried briefly or simmered before eating.
