Its unmistakable green color doesn't come from food dye — it comes entirely from mashed pumpkin leaves worked through the potatoes and maize.

Boiled potatoes, maize, and pumpkin leaves (or other greens) are mashed together into a smooth, bright green side dish, sometimes with beans or peas folded in. It's a classic accompaniment to nyama choma at highland eateries around Nyeri and the wider Central region.

Why it's made this way: Mukimo carries deep ceremonial weight among communities around Mount Kenya, traditionally served at weddings, family gatherings, and other milestone occasions.
