Ndengu is one of the few popular Kenyan stews cooked without any meat at all, yet it's filling enough that highland kibandas serve it as a full lunch on its own.

Green grams (mung beans) are simmered with onion, tomato, and curry spices into a thick, savory stew, sometimes finished with a touch of coconut milk. Central Kenya kibandas and roadside eateries serve it with chapati, rice, or ugali as an affordable daily lunch.

Why it's made this way: Green grams grow well in Central Kenya's highland climate, and ndengu's low cost and protein content have made it a staple of school and workday lunches across the region.
