'Kienyeji' simply means 'local' or 'free-range' in Swahili, and diners in Eldoret and Nakuru will pay a premium for it over broiler chicken for its firmer texture and deeper flavor.

Free-range indigenous chickens are cut up and slow-simmered with onions, tomatoes, and spices until the meat turns tender and the sauce thickens. Rift Valley eateries and market kitchens serve it with ugali, rice, or chapati.

Why it's made this way: Indigenous chicken-keeping is woven into rural Rift Valley households, and kienyeji chicken's slower growth and foraged diet give it a taste locals prize over industrially farmed birds.
