Vendors along Rift Valley highways sell ears of corn straight from the farms behind their stalls, so it can go from field to fire in the same afternoon.
Whole maize cobs are roasted directly over hot charcoal, turned by hand until the kernels char and blister, then rubbed with a wedge of lime and a pinch of chili salt. Roadside vendors across the Rift Valley's maize belt sell them to passing motorists and market-goers.
Why it's made this way: The Rift Valley highlands are Kenya's main maize-growing region, and roasted corn stands are a direct, informal extension of the farms surrounding towns like Nakuru and Eldoret.
