The recipe rode into Beirut with Armenian refugees who settled in Bourj Hammoud after fleeing Anatolia, and the neighborhood's grills still cure the sausage with the same fenugreek-heavy spice paste used back home.

Spicy, garlic- and fenugreek-cured beef sausage is pan-seared until it blisters and releases a pool of deep-red fat, then stuffed into bread with tomato and onion. Bourj Hammoud's Armenian grills and butcher-counter stands sell it as a fast, fiery lunch.

Why it's made this way: Armenian refugees who settled in Beirut's Bourj Hammoud district brought soujok with them, and the sausage has stayed a defining flavor of that quarter's street food ever since.
