Instead of cheese, it hides a filling of whipped cream and orange-blossom water under a crown of golden shredded pastry — the lighter, cream-based cousin sold right alongside Tripoli's cheese-based knafeh.
Fine angel-hair pastry is baked until golden, then layered with whipped ashta cream scented with orange blossom water and finished with honey and crushed pistachio. Tripoli's sweets shops portion it out alongside a glass of tea.
Why it's made this way: It grew out of the same souk pastry houses that made Tripoli famous for knafeh, giving the city a cream-based sweet to sell alongside its cheese-based specialty.
