It looks just like classic meat kibbeh from the outside, but bite into the torpedo shell and the filling is entirely flaked white fish and bulgur — a Lenten swap coastal cooks have made for generations.

Cooked white fish is pounded smooth with fine bulgur, onion, and warm spices, shaped into the classic torpedo form, then fried until deep golden or baked in a tray with tahini sauce and pine nuts. Tyre's Lenten tables and coastal home kitchens turn to this fish version whenever meat is off the menu.

Why it's made this way: In Tyre and Sidon's Orthodox Christian communities, kibbeh made from the day's catch instead of lamb became the customary way to keep the dish on the table through Lent and other meat-free fasting periods.
