The dough is nearly identical whether it's left plain or hides a pistachio center — the only difference is what the baker tucks inside before it goes into the oven.

Ghee, powdered sugar, and flour are worked into a crumbly shortbread dough, shaped into small domes or rings, and baked pale gold — some plain, others hiding a whole pistachio. Sidon's old-souk sweet shops, like the generations-old Al Baba, sell them by the box.

Why it's made this way: Sidon's sweets houses built their reputation on delicate, ghee-based cookies like sanioura, giving the city a signature confection distinct from the cheese-pastry sweets of Tripoli further north.
