Traditional sfouf is made without eggs, and the pan is greased with tahini rather than butter before the batter goes in.

Semolina and flour are mixed with turmeric, sugar, and oil into a batter that bakes into a dense, golden cake, scattered with almonds or pine nuts and cut into diamonds while still warm. Sidon's street bakeries sell it by the square alongside other souk sweets.

Why it's made this way: It's one of the sweets that earned Sidon its reputation, alongside Tripoli, as one of the two Lebanese cities most famous for their confectionery traditions.
