The word sharmoula (chermoula) does double duty across the Maghreb — it names both the spiced marinade itself and the finished grilled dish.

Fresh Mediterranean fish is marinated in a spiced tomato-and-herb sauce built from garlic, cumin, paprika and chili, then grilled or baked whole. It's widely cited as Benghazi's signature dish, showcasing the daily catch landed at the city's harbor.

Why it's made this way: Benghazi's identity as Cyrenaica's coastal capital runs through its seafood cooking, a legacy that reaches back to the ancient Greek colonies of the Cyrenaican coast, whose taste for fresh fish, olive oil and simply dressed seafood still shapes the city's kitchens.
