Ravitoto was historically ranked among the 'seven most desirable dishes' of the 19th-century Merina royal court.

Young cassava leaves are pounded to a coarse paste, then simmered slowly with pork, garlic, ginger, onion and tomato until the greens' bitterness mellows into a deep, savory dish, served heaped over rice.

Why it's made this way: Pairing bitter greens with rich pork fat reflects a highland habit of stretching a small amount of meat across a big pot of vegetables to feed a large household.
