'Tsaramaso' literally combines the Malagasy words for 'good' and 'bean' — a small vote of confidence built right into the dish's name.
Dried beans are simmered slowly with beef, onion, garlic and tomato until the beans turn soft and the sauce thickens, ladled over rice as a filling everyday laoka in the cool Betsileo highlands.
Why it's made this way: Around Fianarantsoa's terraced hills, beans grow alongside rice on the same small highland plots, making a hearty bean-and-beef stew a natural, land-efficient counterpart to the region's famous rice terraces.
