Achard traces back to Réunion Island's Indian Ocean creole kitchens, carried into Malagasy coastal cooking through centuries of regional trade.

Green mango and lemon are shredded and marinated in oil, chili and spices until tangy and slightly fermented, sold in jars or by the scoop at northern coastal markets as a sharp counterpoint to rich coconut and seafood dishes.

Why it's made this way: Trade across the Indian Ocean linked Madagascar to Réunion and Mauritius, and achard is one of the clearest culinary fingerprints of that exchange on Madagascar's coasts.
