Antsiranana sits on the vast, sheltered Bay of Diego Suarez, one of the largest natural harbours in the Indian Ocean, whose calm waters supply much of the city's daily catch.

Chunks of fish, shrimp and other reef seafood are threaded onto a skewer and grilled over charcoal with light seasoning, so the fresh catch speaks for itself.

Why it's made this way: The clear bays and reefs around Antsiranana and Nosy Be supply an easy daily seafood catch, and skewering it for the grill turns that catch into fast, portable street food.
