This dish was documented on camera in Antsiranana (Diego Suarez) for a photo project themed 'farm to plate,' capturing crab straight from the region's mangrove coastline.

Fresh crab is cracked and simmered in a sauce of tomato, garlic, ginger and onion until the shell soaks up the aromatics, served with rice to catch the sauce.

Why it's made this way: The far north's mangrove estuaries around Antsiranana and Nosy Be are some of Madagascar's richest crabbing grounds, making crab an everyday catch rather than a luxury.
