The dish takes its cooking style straight from Chinese chow-mein stir-frying, carried to Madagascar's ports by generations of Chinese migrant traders.

Wheat noodles are stir-fried with shredded vegetables and often a choice of meat in a simple soy-seasoned sauce, a quick wok dish sold from street carts in port towns with long-established Chinese communities.

Why it's made this way: Toamasina's role as Madagascar's largest port has drawn Chinese traders since the early 20th century, and dishes like minsao show how their cooking fused into everyday Malagasy street food.
