Mokary is essentially the east coast's answer to mofo gasy — the same charcoal-griddled rice batter, but enriched with coconut milk.

A fermented rice-flour batter mixed with coconut milk is ladled into small molds and cooked over charcoal until the edges crisp and the centers stay soft, sold hot off the griddle by street vendors in the morning.

Why it's made this way: The coconut milk marks this as a coastal adaptation of the highland mofo gasy, reflecting the coconut palms that line Madagascar's tropical east coast.
