The name is simply descriptive: ravina means 'leaf' and vomanga means 'sweet potato', so ravimbomanga is just 'sweet potato leaves'.

Sweet potato leaves are stewed with small dried, salted shrimp (patsa), garlic and tomato into a fast, intensely savory sauce that's ladled over rice.

Why it's made this way: Dried shrimp is a coastal pantry staple in Madagascar, letting cooks pack an inland vegetable — sweet potato leaves — with a briny hit of umami from the sea.
