Vezo fishers still catch much of this octopus by free-diving the reef flats at low tide and hooking or spearing it by hand, without boats or nets.

Octopus caught on the coral reefs and lagoons off Toliara is tenderized, skewered or laid whole on the grill, and charred over coals until smoky, sold at simple beachfront stalls alongside the rest of the day's catch.

Why it's made this way: Octopus fisheries along Madagascar's southwest reefs are such a significant local food and export resource that parts of the coast now run seasonal fishing closures to protect the stock.
