Grilled Reef Fish with Vinaigrette

The Vezo fishing people of this coast are traditionally semi-nomadic, historically moving their villages along the shore to follow the fish rather than settling permanently in one spot.
Whole reef fish are grilled over charcoal until the skin blisters, then served simply with a tangy vinaigrette and a side salad, a straightforward catch-of-the-day meal typical of the fishing villages around Toliara.
Why it's made this way: The Vezo, whose name roughly means 'the people who fish,' built their way of life around the shallow reefs and lagoons of the southwest coast, and grilling the day's catch remains the simplest expression of that tradition.
