In the driest pockets of the south, families have long stretched scarce rice by cooking it together with cassava, maize or sweet potato instead of eating rice alone.

Rice is cooked together with chunks of cassava, letting the starchy root stretch the grain and add its own mild sweetness, a practical staple in southern Madagascar.

Why it's made this way: The Southwest's semi-arid climate makes rice harder to grow than on the well-watered highlands, so cassava has long filled the gap as a drought-resistant partner to rice.
