Culiacán's dogo carts pile on so many toppings — beans, jalapeños, mayo, ketchup, mustard, and crushed chips — that the hot dog itself often disappears completely under the mountain of extras.

A bacon-wrapped hot dog is grilled until the bacon crisps, then loaded with pinto beans, grilled onions, tomato, jalapeño, and a swirl of mayonnaise and ketchup. Night carts in Culiacán and Mazatlán stay packed with customers well past midnight.

Why it's made this way: The heavily loaded, bacon-wrapped Sinaloan style, richer than its Sonoran or Tijuana cousins, is a specific Culiacán street-cart invention that spread from there.
