At the Gran Café de la Parroquia, customers call for milk by clinking a spoon against their glass, and a waiter arrives to pour hot milk from a tall kettle held high overhead.

Strong dark coffee is poured into a glass and topped tableside with a stream of hot milk poured from a height. Sidewalk cafés in the port city of Veracruz, especially La Parroquia, have served it this way for generations.

Why it's made this way: Veracruz's coffee-growing highlands and its historic port cafés built a distinct coffee-drinking ritual found nowhere else in Mexico in quite this form.
