Veracruz garnachas are fried, not just griddled, giving them a distinctive crunch that separates them from the many other regional Mexican snacks that share the 'garnacha' name.

Small, thick corn masa discs are fried until crisp, then topped with shredded meat, tomato sauce, and a sprinkle of queso fresco. Street carts throughout the city of Veracruz sell them in small plates as an afternoon snack.

Why it's made this way: Veracruz's version is fried crisp rather than soft, a regional variation distinguishing it from the garnachas found in other Mexican states.
