Unlike the grilled LM Prawns eaten with the hands, this version of the same prawn is simmered down into a thick, garlicky coconut-milk sauce and eaten with a spoon over rice.

Prawns are simmered in a sauce of onion, garlic, tomato, and coconut milk, spiked with piri-piri and sometimes curry powder carried along old Indian Ocean trade routes. Market cooks in Beira ladle it over rice for a filling lunch plate.

Why it's made this way: Beira's fishing fleets bring in prawns daily, and the coconut-and-spice treatment reflects centuries of trade between Mozambique's coast, Goa, and the wider Indian Ocean world.
