'Prego' literally means 'nail' in Portuguese — a nod to how thin garlic slices are pounded straight into the steak before it hits the pan.
A thin beef steak is pan-seared with plenty of garlic, sometimes finished with butter or a splash of piri-piri, and tucked into a crusty white bread roll (pão). Beira's roadside barracas and bakery counters sell it hot, the bread soaking up the pan juices.
