The tuna itself is barely dressed on the grill — most of the flavor comes from what's piled on the side: a tangy preserved-lime achar and a sharp green mango pickle.

Thick tuna steaks are grilled simply over charcoal at Ilha de Moçambique's early-morning fish market and waterfront stalls, then served alongside preserved lime achar, green mango pickle, and piri-piri sauce. It's eaten by hand or with rice, straight off the auction-fresh catch.

Why it's made this way: Ilha's fish market runs a noisy dawn auction where the day's tuna comes straight off the boats, and pairing it with Indian-style pickles reflects the island's centuries of Swahili and Indian Ocean trade.
