The curry's backbone — cardamom and coriander — didn't arrive via any African trade route at all; it sailed in with Arab and Indian dhow traders who used Ilha de Moçambique as an Indian Ocean stopover for centuries.

Fresh crab is simmered in coconut milk with garlic, chili, lemon, and warm spices like cardamom and coriander until the sauce thickens around the shell pieces. On Ilha de Moçambique's dhow tours and in home kitchens, it's served with rice and often a side of pickle.

Why it's made this way: Ilha de Moçambique was the Indian Ocean's key Portuguese-Arab-Swahili trading post for some 400 years, and this curry — built on spices that never grew anywhere nearby — is one of the clearest edible traces of that history.
